I know this is probably a stupid question, but when I switch to carb, do I have to worry about steep hills or rapid acceleration\deceleration stalling the engine?

The only time anyone has issues is 4x4 trucks, and it's rare - they have to be doing some serious rock crawling to get that vertical! And even those folks were doing that stuff before FI was readily available.

Holly sells a special carb for 4X4 people who go rock crawling that will allow you to hit 60or 75 degrees to vertical before it will spill. You won't have any problems on normal roads, even if you live in the mountains.

If it's not tuned right it will stall out. Just make sure it's tuned and you shouldn't have problems. Also something a lot of people don't realize when they are new to carbs is that you have to re-adjust it if you move to a place with different altitude. People come to Cheyenne all the time from low sea level places and don't re tune their carbs and stall out all the time.
