Victor jr. Water plugs/ sensors
am trying to find out what plugs I need that go on both sides of the thermostat. Also there is a small screw hole at the back, do I need anything for that? Thank you.

Theads into any fitting that's got water on the other side are NPT (National Pipe Thread). They'll either be 3/8" NPT or 1/2" NPT. Please don't use plumbing hardware, even though it will fit the thread perfectly. It's looks awful when people do that.
If you get some nice looking aluminum NPT plugs it'll look a lot more professional. Sealant on the threads not only to seal it up, but to help if you ever want to remove them again. Aluminum-on-aluminum will weld itself together in no time without it.
NPT threads are a TAPERED thread. They don't just "stop" when they're home. They just keep getting tighter. Most people over-tighten them. A smidge past "snug" is usually sufficient.
Screw hole at the back? You mean at the rear below the carb pad? If so, that's for an external vacuum line- like, say, to a power brake booster or transmission modulator. Whatever you like. It's also NPT thread, usually 1/8" NPT.
