Will this be a street/strip car?
IMO if you are building a junkyard combo there is no point in wasting huge $$$ on a turbo when there are some proven cheap combo's
Borg S475 with the 1.10A/R T6 (83mm turbine) is around $650-700. This would be the best more reliable cheap option BUT They are massive. So you will need to get creative to make it fit without a lot of cutting. This turbo will be a bit laggier on the 5.3l but if you do your hotside proper with 2-2 1/8 piping it should spool up decent with the LS6 cam. A custom cam would make this turbo shine.
Ebay GT45 (69mm) (77mm turbine) 1.05a/r T4 These have been proven to around 600whp and seem to be very reliable. for around $250-300. These are also a bit turbo but still a lot smaller then the Borg Warner S400 series
ON3 Performance 76mm. 0.96 a/r (75mm turbine, newest model they released) This would be the smallest turbo out of all of these. Similar to a Turbonetics 76mm. Small 3" hot side discharge and 2.5" cold side. The 75mm turbine allows a lot more flow up top. I think the 75mm turbine one is $399. The old 65mm turbine was around $320.
Those would be my top 3 pics for cheap turbos to get the job done. I would say in order from best to worst, but also in order or most to least expensive and biggest to smallest.
Hope this helps ya out.

Re: need help picking turbo for 5.3 build
Also just realizing you wanna also go T56 I would probably go with the smallest of the three, the On3 76mm with the 75mm turbine. This would make a great street combo with a T56, Will spool super quick. I would imagine 450whp on around 8-10psi with a T56 should do it.
Also to add. If you were gonna spend around the 800 range the Turbonetics 78mm with the 68mm turbine would perform well. Pretty well the exact same as the on3 just with a brand name and warranty. But like I said, if its a junkyard build why bother on big $$$.

Re: need help picking turbo for 5.3 build
Yup thats the GT45 im talking about. The downfall with that turbo kit is its made for a 4th gen. So will push the turbo into the rad some if I remember right and flipped manifolds dont fit without modifying on a 3rd gen. you will need to find something someone is selling that was custom made, or pay the price sadly. I do all my own work. if I was at that point in my build I would have no problem building you something . But With a 1 week old baby I wont be tearing into my car for a while lol

Re: need help picking turbo for 5.3 build
procharger is fixed price.
How much can YOUR turbo setup be built for?
A turbo setup can vary between 0 to 10s of thousands of dollars. Where does your kit fit in?
It is likely that your kit will cost $1 to 2K.
Then another 1K for tuning hardware (PCM, WBO2). Both the SC and TC would need this.
