Kinda like when you were a kid and you always wondered if the refrigerator light stayed on all the time, and

Of course I was the kinda kid that got IN the fridge and closed the door just to make sure it actually did go off!!!!!
But yea, the hood light has a mercury switch that turns it off and on. There's a itty bitty tube filled with mercury except for one little spot. They call it a bubble, or sometimes a bubble switch. Mercury conducts electricity. Once the mercury passes over both contacts in the tube, it turns on the light.
There's a similar type of switch on the old round Honeywell thermostats that you use for the furnace in your house. If you pop off the outter ring you'll see what I mean. It's connected to a spring that works similar to a choke coil on a carb. When it gets warmer or colder, the coil spring moves accordingly and the tube moves with it. Whenever the mercury in the tube moves the right way, the heat or the A/C comes on.
