I really wouldn't want to put a cheap piece of steel in for a floor plan. But when I think of cheap in this case...I think of thinner/not correct shape. The floor is a major part of the body structure. The pans I bought seemed to be thinner material than the original floor.
If you don't need the entire pan, fabricating some patch pannels would be the cheaper option.

I have seen a couple of floors that were made from fabrication. If you are patient you can do it without comprimising structure. I went the donor car route. I am currently in the process of cutting the pan out. I just needed the drivers side and only part of it. I am still going to have to fabricate some pieces. There are a couple of good threads on here that showed some fabrication on the floors. I would still recommend SFC's.
I say fab up some out of flat metal. Just make sure you put the bends in like the factory had. That's what I'm doing. Don't have the cash and it's gonna be a lo-power build. So with SFC's you should be ok.

xxx3man. I have the whole car (with title) that I bought for parts. It is stripped down to the shell. I still need some metal out of it but I would take 100 for the whole car if you want it when I am done. Or shoot me an offer for just the floor pan. The problem is getting it separated from the subframe. Do you have a spot weld cutter? That is what you really need. I went through several cobalt bits and drilled them out.
