Okay, I haven't switched from FI to carb, but nobody else is chiming in.
If you keep the in-tank electric pump, you can keep the in-line filter. It's still a good idea to have a filter right at the carb inlet (such as the Holley sintered filter under the inlet nut - in fact, Holley won't honor warranty if you don't have those inlet screens).
If all you have is the mechanical on the engine, it's best to remove the in-line filter back by the tank, and use an in-line filter between the pump and carb (and still have the inlet screens). You should use a sock on the pick-up in the tank to protect the pump (see sticky at the top of the forum about making a mechanical pick-up out of an in-tank pump pick-up).
On the cheap, a Fram G3 filter between the pump and the carb. Flows a ton and costs nothing. It's got 3/8" hose nipples on either side which will work just fine since that's almost certainly the size line you are running off the pump and on the carb.
I remove the restrictive stock filter from the nose of the carb when I install this filter (I'm talking stock QJets here, not sure if that applies to you).

Thank you Damon for that post! I'm using 3/8" hose to my Q-jet with a stock filter in there. It's worth trying to see if that'll clear up my fuel delivery problems.
So no one is using a filter between the tank and the pump?
I was using the stock filter for so long, and was unaware how fine the particle it was... I had to e-mail Purolator to find out the micron size of 10 microns.
That is too restrictive for my mechanical pump, which as predicted, caused cavitations, vapor lock, and eventually just completely failed. Now that the new pump is in, and the filter temporarily replaced, I need a 100-150 micron filter just to keep the large debris out of the pump, and a finer 10 micron filter between the pump and the carb, which I already have on there.
I just ordered an array of adapters, fittings, filters, and elements. As soon as I get them, I will see how it all mounts up. It was painfully difficult to figure out how to put this all together... some parts that I would like just don't exist.
I think it might have been easier(and definately cheaper) if I just took a stock filter, cut it open, and put in my own 100 micron filter. Or just replace all the fuel lines with -8AN lines and fitting, which I will most likely do later on.
