First off, my car overheats when its sitting still, so we've replaced the switch on the front of the block (in the manifold) and just replaced the sensor in the block, neither worked. So my dad came to the conclusion that it must be the fan relay... The fan works with the A/C, just not when the engine gets to hot. Also I was wondering what temp the cooling fan is supposed to come on, because I looked and we didn't let it get above 210 before we shut it off... thanks

The fan should turn on around 220-230 (people will tell you different temps). The fan relay is located on the driver side firewall. It is at the very end where the firewall and left front fender meet. There are two relays in that location, one is the fuel pump relay and one is the fan relay. If you look straight at it, the fan relay is the one on the right and has 4 wires going into it (the fuel pump relay is on the left and has 5 wires going into it).

How do I know all of this you might ask? Because I have the exact same problem that you do. I have replaced the same sensors you have and a new relay. I am going to see if this fixes the problem tomorrow. I'll let you know how it goes.

You said you replaced the sensor in the block. Do you mean cylinder head? The only sensor that goes in the block is the knock sensor.
