Coolant gauge reading too hot!!

A while back I repaired the head gaskets on my 305. Ever since the temp. gauge has been reading too hot. I had put it on a computer to find that the car runs at normal temperature, the fan turns on at around 225-230. If I remeber correctly, I had to repair the wire to the sensor on the driver side head. I think I had to splice a wire onto the existing one. Could it be the gauge and not have enough resistance?? I had swapped my 85 mph cluster out for a 145 mph cluster w/ 22000 miles on it. The temp. gauge did the same thing so I suspect something else. The gauge acts normal while driving, but at a stand still it goes all the way to 260, and then the fan comes on. NEED HELP!!
