Complete car wiring help!!!

Hey guys. I am starting to buy parts for my drag project. Over the winter I am going to take out all the interior, and all the wires in the car. From there I plan ti wire it back up with only the stuff I need. Once the wiring is complete I will install the 12 point cage, through the floor sub frame connectors and bolt the dash back up. I want to get the wiring done before the cage is in so I am not bending around the door bars.

Stuff I need:
I'd like to keep the power windows
I need all the external lights working (not worried about interior lights aside from gauges.
Fuel pump (with switch)
Water pump (with switch)
Fans (with switch)
MSD digital 7 programmable
NOS Launcher progressive controller
Power for my nitrous
Battery in trunk
Master kill switch (NHRA IHRA)
Battery terminals on the bumper
Wideband 02
transbrake

Don't need:
Wipers
interior lights
heat controls and box
Radio
TBI wiring
emmissions crap




I basically want to neaten the cars wiring up, and most importantly save weight. Is there a painless harness that will make my life a lot eisier? Do you guys recomend anythying? Got any tips? I hate wiring so I want to do it once, do it right, make it all easy to work on, and do it neat. Clean and lightweight is key to me. Is it worth trying to chop into the stock harness and cut it down to what I need then install some switches? Ideally I'd like to have a nice panel all labled with all the relays for the whole car.

I got my fingers crossed that one of you on here has some miracle advice that will make me feel good about the wiring project. I will solder and shrink wrap everything I can. I don't think I am going to like any of this haha.
