If its clogged, as your car warms up and you try to drive faster, like freeway for instance, it will respond really sluggish. The exhaust system will seem and smell EXTRA HOT around converter, I had this happen on a 81 Monte Carlo. After it ran 15 minutes, it almost could not accelerate past 40 mph. Try unbolting it for a "test drive", you'll know right away.
When you say you don't have it connected, I assume you have it off the car. I'm not sure if you can tell if it's clogged by looking at it. I've only heard according to the previous post while it's on the car.
See what happened was I bought this car in October from a kid. He cut the cat off to get a louder sound with his flowmasters. He didnt think it was loud enough. His friend told me that he also thought the cat might have been clogged. Now I have to pass inspection and emission so I need it back on.
What's a new cat cost against the time, money and agrovation of running it through emissions with the old cat and failing the test after which you'll have to do it all again.
I don't you'll be able to tell much by looking through it. If it's an old part maybe just better to replace it.
