That seems to be a pretty common upgrade. Seats are bolt in, console from what I've read takes a little work, but not much. The dash and door panels Ive heard take just a little fab work and wiring skills.

I'm across the Narrows Bridge from you over in Bremerton and working on an 89 RS myself - upgraded the suspension a bit, changed a rear end and working on the brakes.

Welcome to the boards. You shouldn't have any trouble finding help/advice, even locally as there are several great 3rd gen owners close by.

If you looking for 4th gen console, seats & carpet then your best best is to check out Craigslist, or ebay. Most of the junk yards for 4th gen stuff are rare if you find anything worth while.

Or you can order them through like Hawksthirdgen or even Classic Industries, or year one. same goes for the Weatherstiping, Just make sure you get the kit you need. I think the t-top kit goes for about 229 which isnt bad. which is everything you need for doing the t-tops & the doors just need a trunk kit.
