maf diagnostics

well i am pretty new to diagnostics and even newer to a maf based system. i've got a 1989 camaro iroc-z 5.0 5 speed. its a nice car ,but it runs pretty rough unfortunately. so i figured i'd hook up a scanner to it and see what i can find out. Everything seems to be in check except i'm not realy sure how the maf works and would like a quick description to see where i should go next with this.

so question #1 is the maf sensor a 0-5 volt sensor like most of the others in the engine bay? Should i see a lower voltage reading for less incoming air and higher for more incoming air?

question #2 around how high would a full bolt on 305 peak the mafs airflow if i matted it under a high load, i do know max is 255g but mine doesnt seem to go anywhere near that high.

also 1 other question the block learn is what i should be looking at for long term fueling correct? perfect is 128 i do believe ,but if higher does that mean im richer or leaner?
