These may not be as good as a Helms manual however they may help. I checked this site out-http://www.autozone.com/az/cds/en_us/0900823d/80/16/3f/b5/0900823d80163fb5/repairInfoPages.htm The bottom pictures appears to be the ac power steering cutout switch.
The top one I can't tell. Maybe if someone can scan a page from a Helms manual you can identify them by the colors and pin location trace end to end you know.

The second plug appears to be the Fog light harness to headlight harness connector.

I could not find the other switch in your first picture, what color are the wires?
If everything works on your car correctly this may just be a pigtail remnant that didn't get used on your vin model due to options it was chosen to have. I know it causes concern though initially. I have one behind my bellhousing on my 350 that serves no purpose.

first one is unused .. it a grouding circuit for a that carburators mixture soloniod ... my lg4 had it to. but it's only grounded for diagnostics leave it alone.

The green one is used for diagnostics/ tune-up's. Connect it to a dwell meter to verify correct mixture operation. Adjust the carb. idle mixture screws to a 30 degrees dwell reading.

The fog lights interact with the headlights 'in that' the fogs should only work when the Park or headlights are ON and should not work when the high beams ON. That's what this plug on the headlight harness is for.
Splicing your aftermarket system into the cars wiring is up to you. Some people want the fogs without any other lights at all and some want the fogs to work when the High Beams are ON. How you splice it will depend on what you want and the aftermarket system your installing.
