Open headers
Are there any negative effects associated with running headers with no exhaust system?
Other than lots of noise, which I don't consider a bad thing.

I'll assume you don't mean on the street. At the track on a modified motor you can expect improved performance. Lower ET and increased MPH. How much depends on degree of mods & engine size. Also, efficiency of collector back exhaust system. In the winter don't leave your collectors open while parked. Cool down may warp exhaust valves and let moisture in.
