Hawks & a few other companies sell pretty much everything you want... carpet, floormats, headliner, door panels, seat upholstry kits, etc... You can mail order everything...
SEM makes the best paint to redo the plastics if needed...
I'm kinda in the middle of this... I got a custom color, "beechwood" from carmotorsports, carpet, mats and extra carpet for doors... I was gonna get the seats redone locally, since Hawks has no beechwood seat kits, though they do have beechwood headliner kits... I may even cover my plastic in some kind of fabric, but locally too...
So depends on what color, how much work you want to do and / or you want to do any of it locally.

Also check out moderndaymuscle.com, they have a lot of original GM parts and interior components. Have a look around the links on the right side of this site, lots of great stuff.

Re: crappy interior
carmotorsports doesn't sell everything....
I went through them because they were the only ones who could get the custom "beechwood" color... There were 2 companies supplying carpet for our cars, one bought out the other recently and are restructuring, so I wanted to grab up the special carpet before it went away...
Hawks does sell everything...
Also, Jim, not sure if he's a moderator here too, sells the same stuff, probably the best prices. If I decide to get more stuff, I'll go through him...
Here is his site... it's the same stuff as Hawks & Classic, just better prices.
