I know I have seen this before in the tech articles but I cant find it now. So my question is how do you wire the fans to a switch to turn them on manually?

I just did this in my car a week or so ago. I spliced into the green/white wire going into the relay and then ran a wire from that into the car, to one side of a switch. The other side was grounded to one of the bolts that holds the shifter down. Then just flip the switch. That's how it works, anyway. The ecm grounds that wire. There is a really good diagram showing how to do it on single and dual fan setups, but I cant find it now either. I'd imagine it's exactly the same thing though - why wouldnt it be?

I did the same mod, but I used a fog light switch, since my car is a base model. The neat things are, it looks factory, there is an indicator light to let you know when the fan is on (even if the a/c has commanded the fan on), the switch is lighted and dims with the dimmer switch.

with this done will the fan still come on at 220 if the switch is off?

yes, if there was nothing wrong with your fan setup to begin with.
