I have a 88 gta

I cut 1 coil out of the front springs a few years ago
and now I want to do that to the rear

I never got a alignment

but I was wondering how I do it and how I align the rear??

I would only cut a coil a coil from a new OE spring. The old springs are worn and may have a longer suspension travel than a new spring would if shown the same force. If you are lowering the front you really should get an alignment, especially if it's been a few years since you have. I would search out in your area (say an hours drive) for any shop that will offer lifetime alignment specials. The rear end if left with OE parts does not need aligned and would only need aligned if you started to use adjustable length parts. The single or double adjustable control arms could angle the rear end if they are not exactly the same length. This happened to me when I took my Camaro to the GM dealership (wow, did they have a nice alignment rack!) and I found out my rear was pointed towards the passenger side by 1/4 of 1°. So you should be able to save some money by only buying a 2 wheel alignment.
