stalls, or ildes way up and drops

I haven't seen a related post anywhere, and hopefully I am posting this in a good spot. I've been working on this issue for over a year now, and now I am at a dead end. My car was parked for a year or more however I would come outside start it up idle it for a good 30 to hour and shut it off. One day I started it up, and it would Idle up...then idle down. I wasn't too concerned at the time, and believed I had bad gas. The cross fire hood was rusted out, and I decided to replace said hood with a new cowl induction hood. While working on my car I discovered that the car wasn't running. My attention went front he hood to the engine of the car. Basically you floor it, sounds idles up to about 3500 4000, then it just drops on its face. After a good duration it wouldn't start at all. When its cold, will fire up pretty easily but didn't sound right. In fact very rarely would it sound right. This is list of things I have done.

dumped the fuel tank, Replaced fuel filter, replaced spark plugs, replaced wires, replaced cap and rotor, ignition coil, pick up coil. I've ran a multi meter on just about every sensor imaginable, checked for vacuum leaks, p
put hole in my cat converter. (at this point grasping for straws)

The last thing I have just done, was replaced the pick up coil since the car wouldn't restart after it got warm. After I did this...now the car sounds right but won't keep running. Also its back to low idle then high idle at 3500 rpms. (just bounces low to high like this) Can someone point me into a direction? I have some youtube videos but I won't post the links on here. If you search "1982 crossfire camaro changed pickup coil now it runs like this" you will see what its currently doing and can find the other related videos. I'm about to slap on a fuel pressure guage before fuel filter and not sure what the max pressure should be. Any how if anyone can point me into a direction, I would be most grateful. Tired of beating me head on the wall.

Connect a scan tool and a fuel pressure gauge, see what the data stream and the pressure gauge tell you.

Far as I know, TBI runs on 9--13 psi except for some 454s.
