Could stupid mistake damage engine?

 Well I started my car for a few seconds after I put gas in it tonight and heard a real loud tapping so I shut it off. Waited and restarted it while recording it on my phone to document it and then realized my dad had taken out the number one spark plug today so I shut off the engine.

Could any damage occur from doing this?

If it only ran for a few seconds with the plug out there shouldn't be any issues. Put the plug back in and see how it runs.
