how to maintain OPEN Loop

how to maintain OPEN Loop

Hey guys I'm working on a derby car with a broken 02 sensor. I was wondering if there was a way to keep the car running in open loop so I don't need to buy a new 02 sensor .
Can I just unplug the coolant Temp sensor?
The car is an 87 Chev Celeberty with a 2.5 TBI

Axle/Gears: 9-bolt w/ 3.23's
having the O2 unplugged should be enough to keep it out of closed loop, although itll set a code.
