Why am I running so hot?

I just put a new engine in my Z and I am running around 180 but as soon as get into stop and go traffic, I'm up to 240-250? I have 6deg initial timming, same compression, plugs are a bit rich becasue I put the ford svo 24lb injectors in, slightly larger cam, but not much, superram intake, and I'm even using water wetter? The car seems to be lacking power, almost like it is clogged but I performed the vacume test and the back psi is fine. WHAT GIVES>???>

What kind of fan setup are you running? Shroud? Tested your radiator cap?

are you running a thermostat? a big myth is that no thermostat make the car run cooler, when it actually makes it hotter, this happens because the coolant is flowing so much, it doesnt have enough time to cool off in the radiator.

check your elect. fans and make sure they are comming on, just the air passing through the rad. at interstate speeds will keep the car cool, but when sitting in traffic there is no air flow except that of the fans. (I.E. check fans for operation)

I read your sig. and I didnt see if anything on the catalytic converter. If you have one, check it. It might be clogged. I say this because you say your performance is lacking, and a clogged cat will cause temps to rise.

Yeah but still check the cat. Run the car till its pretty warm, look at the cat, I'll bet you its glowing red. Probably eaiser to see at night, or in a closed garage. But dont stay in there for too long.
