Go with GM rubber... they'll hold up and you'll appreciate less vibration for the street.

85% street driven vehicle making ~500HP. Sees some track time. What is your opinion on putting up with poly motor mounts?

I'm using the Moroso Solid Steel Upper and Lower motor mounts and Steel Trans Mount. This car is my daily driver and the difference in vibration is barely noticeable.
Usually people think it's gonna be too much on a street driven vehicle, but I've run the Moroso steel mounts on every chevy I've had since High School.
The shifter doesn't wiggle around as much as it did with a rubber mount. Other than that you probably wouldn't notice a difference.
The nicest thing about them is, they'll last forever. I've never had to replace any of them.
As far as Poly goes, well, I haven't used them, but my torque arm mount and sway bar bushings are poly.
If you're making 500HP, I wouldn't waste my time on anything but steel mounts.
Moroso Lower Mount, Part#62610, $32.99/Pr at Summit
Moroso Upper Mount, Part#62510, $21.99/Pr at Summit
Moroso Trans Mount, Part#62600, $18.95 at Summit
