It was the water pump, thanks!
Thanks to everyone who helped me! I got a new water pump in this morning and she is running great now (in fact it wont even go over 160*).
So now I have done almost everything I can do to keep my car cool.
1) Hypertech chip
2) Fan switch
3) Had 160* but car is running cool with out one. Will put it back in soon.
4) TB coolant by-pass
She loves me

Yea the same thing was with me. My temp was always running high. Then I changed my pump cause it was leaking. Now it stays at around 160 and the hotest it gets is 220. I don't even have to turn on the fan.
