Odd Acceleration

Somthing odd that both my cars do. I own a 88 Formula and a 99 mustang(dont flame its for sale i hate it) Well heres the deal... When im crusin say 25 -45 and i just ram the hell out of the game say to pass a slow guy or to put a import to shame sometimes the car will lag(downshifting i know that one) then whats wierd is it raises like 2 -3 thosand Rpms Then shoots off like a F***kin rocket this really bugs me because i know it puts unnessacary stress on the transmission...and i know its not right because my dads vette does not do this (1991 vette) nor did my carbed 86 Z28 i really would like to fix this once and for all please someone help heres some specs

1988 Firebird Formula
305 TBI 142k miles
Holly Chrome dome air filter
tottal stock besides that VERY good condition no vacuume leaks what so ever

Mine does that too (except I made it that way on purpose).
