Gas pedal too low - new carb

Yesterday me and a buddy installed new heads, and with the heads, a holly 650 double pumper. The throttle throw on the holly is a lot shorter than on the edelbrock. So basically the gas pedal is sitting about 3" lower than it used to. The way the floor board is shaped, it's really hard to get the pedal all the way down, it catches on the carpet and stuff.

My only idea so far was this:
extend the cable fully and find a way to attach it to the throttle assembly on the carb, then press the pedal till the secondaries are fully open. Measure the distance between the pedal and the floor, and mount a rubber block to stop the pedal (so i dont jam it to the floor and bend the linkage braket)

if anyone has an easier way to fix this let me know

there is.

get a adjustible throttle cable mount.... your local auto parts store should have one with all the chrome junk.... it'll let you move the mounting point of the cable closer or farther from the carb... that way, you can move it till its where you like it.... be sure to check WOT.
