Valve Job
I have a 91RS that needs a valve job. Does any one know of an inexpensive shop in the metro Detroit area that would be recommended ?

There's always the Yellow Pages. And Regional forums.
Some suggestions once you find a shop:
Step 1: Find a rebuildable set of 081 heads. Often shops have them available. Also available on the Classifieds on this board.
Step 2: Have those heads rebuilt.
Step 3: Remove your heads and install these.

As far as doing the tear down and reinstall myself. How hard is it. I have done most of the stuff to the car so far, waterpump, heater core, struts, tune up, etc.
Also how much should I expect to spend on a valve job and or buying the 081 heads and having them redone.

If you've done a heater core, you've done about as difficult a job as this. But, changing heads is a little more technical. Getting a shop manual is a good place to start, it'll describe the steps.
The two biggest things are timing and valve adjustment. You need a torque wrench. And a timing light.
Do a search on the classifieds for 081's. That will give you an idea how much to expect to pay. Probably in the neighborhood of $50-$100 for a good set.
How much you're charged to do a valve job will vary depending upon how much else is done. A simple disassembly, cleaning, grinding, and reassembly could be as little as $150 (guy I take mine to charges $135/pr.). If you need to replace any guides, that'll up the cost. If you replace the valve springs, have the guides machined for positive seals, install screw-in studs - all those things will add to the total.

Valve seals. Those are easy to fix with the heads even on the car!
Do any places do head work without disassembly/assembly? I'd like to just get my valve seats re-done with a 3-angle cut, and that's all I want done. I know I'll have to call around, just curious as to whether anyone knew or not.

Getting something a little better than the factory used would be a good idea. Certainly the 081 heads would be an "upgrade", but unless you did other things, your current heads would be fine.
But, unless there is leakage past the valve seats (determined by a compression test), you don't need a "valve job".
