Fuel Pressure is all over the place

Car: 1989 Trans Am GTA
Engine: 350 5.7 L98
Transmission: 700R4/Transgo
Axle/Gears: Stock Rear (3.27 gears)
Fuel Pressure is all over the place
Just installed headers and a new NTK oxygen sensor, and now my Fuel Pressure jumps from negative numbers up to about 30 and back down. I'm leaning towards my oxygen sensor being bad but then the car would run off of stock numbers for the sensor right? That makes me believe that stock numbers might keep a constant or close to constant fuel pressure number, and wouldn't be jumping this drastic...
That's just a guess anyways. If my oxygen sensor is "working" what else could cause a problem like this? Also during installation of the headers I removed my AIR system. If you need to know anything else, just ask

Thats what I'm trying to find out

Just took it for a ride, fuel pressure goes into negatives only when I get on it. I have quite a few exhaust leaks, near the header bolts and flanges, could this be causing bad fuel pressure. I would tighten them up, but they are as tight as I can get them.
