Tune up woes

Why are there so much smog hoses all over my 1988 TBI engine? I want to replace the valve cover gaskets and I can't even see the passenger side valve cover for all the tubes and pipes. The drivers side valve cover has hard fuel lines obstucting it. It took forever to change all the spark plugs. I am not a mechanic but I have done plenty of tune up's on other make vehicles of the same era, this car is by far the worst by means of being able to get to the parts needing to be replaced.
I guess what I want to know is, can the smog stuff be removed and can it effect engine performance? I don't have emission's where I live. It will probably take six hours to replace the valve cover gaskets if I replace all the smog associated tubes . Lets say you?

3rd gens are a breeze compared to 4th gen V8's

yes, you can remove the stuff for the AIR but you'll need to cap the exh manifolds.
