Engine swap what don't I need anymore?.....

Hey all, I have been working on my 83 Z28 for a few years now and am finally to the point to throw everything back together and drive the dang thing lol. My questions lye in my engine swap though. The car was originally a 5.0l crossfire car and has been switched to a crate 350 few years back. Right now I have everything pretty much pulled from the engine bay and the motor is sitting in the car with just the valve covers and intake manifold on it now. Since the motor is not computer controlled anymore and I do not live in an area where I have to worry about passing emmisions I am wondering what I will not need anymore.

1. Do I need to hook up a oxygen sensor

2. My water neck has a plug for an electrical connector and a small vacumm line what are these for or can I just get a regular one with nothing on it Since I am looking to get one anyway

3.The evap Canister that sits in front on drivers side do I need this and does my carb have to hook to it

Anything else I can get rid of also as I am sure others have done this swap Appreciate any thoughts thanks....
