FPR problems I think????????

I have an adjustable FPR on my 350 4-bolt .040 over TPI motor. I am also using an external fuel pump mounted to the frame. The problem I an having is that every time I drive it, it runs fine for a while then the fuel pump start to whine and to fuel pressure reads 100+psi or 30-40psi. When the it reads 30-40psi and I open the throttle the pressure drops to around 25-30psi. When the pressure is 100+ and I open the throttle it drops to around 80-85psi. When I drive it down the road and this is happening and I just barly put my foot on the gas the car just fall on its face like you turned it off. The TPI is off of a speed density car and I am using a Painless wiring harness. Any help would be greatly appreciated. Thanks
