The IAC is screwed into the throttle body. I am unsure of the component near the charcoal canister that you are taking about
Told ya! Magggggic.
Ok, then how do I adjust it? Is it that square vaccum block?
I'm used to old school engines, and I could fieldstrip one with my eyes closed, but later models thats a diff, sit-yee-ati-on there.

The IAC is a socket shaped cylinder that screws into the throttle body. There really is no way to adjust it (I think the GM manual has a procedure). The most important thing is to keep it clean. Unscrew it and spray it with throttle body cleaner. Then spray the cleaner into the hole (and the rest of the throttle body for that matter). After everything is clean, replace the IAC. The square vacuum block is the EGR vacuum sensor (if its towards the rear of the passenger side of the engine). Only maintenance is to make sure the vaccum lines are good (again there may be something in the manual).

Apparently, you don't know about the search button; you'd find that quite a few of us know about the IAC (which is non adjustable). It's at the upper right of your screen, be sure to specify "v6 forum", and you could click here: Thread
