Re: minimizing the wiring
The gauge wiring is inside the ENGINE harness.
The Crossfire wiring is inside the ECM harness.
Removing the ECM harness will not effect your guages.......
If the car is an automatic you WILL loose TCC lock-up. A manual toggle switch could be installed so you have TCC control again ( Aftermarket kits are also available.)

This is the C100 from an 82 Camaro - I think it's the same as your 83. The C100 connector leads to the engine bay and splits to 2 harnesses; the Headlight harness and the ENGINE harness. ( you need to keep both of these intact. )

Looking at it I'd have to wonder where your oil pressure gauge wire is located. I see it on the diagram - but only for Carb Cars ?? ( @ pin E5)
Your ECM harness will connect to the dash harness under the pass side of the dash. Dissconnect the ECM there and pull the ECM harness thru the body, then the from behind the fender and remove it from the engine bay.
The plug that the ECM connected to under the dash housing is the C207 connector. Your Oil Pressure wire might be @ pin D5 of C207. ( tan wire ?)

edit
i got the wiring harness out of the car and the only thing connecting it to the other harness was a snap connector (guessing that was the power on to the pcm at key on?)
