I'm not very good at MAF but on the car that will run with starter fluid, check for fuel delivery. If the cars set for a long time perhaps the injectors are gummed up or the fuel pump is dying.

On the first car, have a friend crank the motor over while you hold a finger on a fuel injector, if the injector does not click then change the module under the cap.
On the second car, if your still getting maf codes with a new maf.
change the two relays that drive the maf sensor, if that doesn't work, swap in the maf from the other car and try that.
hope this helps,
John

Sounds like a dead fuel pump on the first one. Do you hear the fuel pump prime when you turn the ingnition on? I would check for fuel pressure aswell. If you dont have any, or barely any, then its time for a new fuel pump.
For the second car, check the MAF relay. For the record, the car will run without a MAF. With no MAF, it will go into limp home mode to protect the engine itself. It will run off of preprogrammed tables... The car should run ok enough to drive it though.

As stated above....
First car sounds like the fuel pump. I had this problem and it was an intake hose attatched to the fuel pump = no fuel pressure. Check to see if you hear the fuel pump prime and check the fuel pressure.
The second car....as already stated, would drive down the street despite a bad maf. Replace the relays....that should cure your MAF code...but not your "not driving down the street problem". I think we'd need to know in more detail what it does when you put it in D and try to drive.
