Temperature Control

I'm kind of having difficulty with my sensors/relays/inexperience. My temp gauge isn't working properly, so I went out and bought a new CTS (actually 2). I replaced the one on the intake manifold (that's the one for the gauge right?) and the one on the driver's side head. I pretty much need to know what each sensor does and what I'm doing wrong.
Also, my fans spin on engine startup and then shut off. They don't seem to come on by a certain temp (but not sure because gauge doesn't work). I'm going to toggle switch them, one per fan and am assuming I need to splice the toggles as the ground for the relays, green-white wire or which one exactly? This is one of the last pressing issues before I can finally get her on the road for the first time. Any and all input appreciated!

Well, since no one else has replied... I'll throw in my 2 cents

Thermo-Fan-Switch is located on the passenger side engine block, under the headers. It only has 1 wire going to it (green i think... maybe blue). When it gets hot enough, it just grounds out, to complete the curcit.

Thermostat - aka, thermo-reactive-valve. This is located on the manifold, with a large hose going to it from the radiator. All this does is open and close to allow the radiator to cool the fluids efficiently.

Temp Sensor - what actually goes to your dash. This is located next on the driver's side, next to the cyl 1 spark plug i believe.

But really man, invest in a haynes or chiltons manual, and study the diagrams. I believe the the fan switch has a relay in there somewhere, so look to replace your relay and fan switch first for that problem before you start tearing up wiring to fix a simple problem.
