1988 iroc built carbed 350 speedo and tune issue

Car: 1987 irocz
Engine: 5.0 305 tpi
Transmission: stock auto
Axle/Gears: stock not sure the ratio
1988 iroc built carbed 350 speedo and tune issue

So i recently bought a 1988 irocz that has a unidentified cam, edelbrock preformer rpm intake manifold, edelbrock 750cfm preformer carb, an what i believe to be a t5 transmission. The car has a major lope with a idle of roughly 700rpm. Tonight was my first drive since buying it 3 weeks ago

all cylinders are firing
fuel sits at 6.5lbs at carb side of the regulator
has a brand new air intake

first issue i find is at low speed cruising( about 30) the car will slowly bounce in rpm. Had my aftermarket tack set to 4cyl. At that point (forgot to switch it ) so rpm at that tine was unreliable. But its enough of a bounce to feel the car buck when it returns to the cruising rpm.
2nd issue. When ideling my autometer afr guage sets at 17 at cruising it moves between 8 an 14.

I am guessing both of the above issues is solved with a clean an tune of the carb. But this is my first carbureted vehicle.

3rd issue. So tonight being my first drive i also noticed in traffic that my 30mph is 20 on my speedo would like to fix this. If its super hard to fix i would rather get a aftermarket speedo that can be adjusted
