How do I check my U-Joints?

Engine: Rebuilt and modified 350
Transmission: rebuilt T-5
How do I check my U-Joints?

Ok, so when I drive it normally, and shift at about 2500 RPMs, I have no problem, but when I let the rpms get past 3000, I hear a metallic noise come from my car. I am driving a built 350 with a T-5 trans. Before I go to expect the worst, I want to check the simple things. I did shoot out somehting my mechanic dropped down my exhaust pipe, so I am also wondering if it could just be a broken baffle. I talked to some people, and they said to check the U-joints too. How do I go about doing this? Does anyone else have any ideas what this could be? Also, I feel as though I lost some torque. I need help.

listen for a squeek, look for movement between the caps and trunnion when you wiggle it, pull the caps and look and the needles
