Can you put a window tinting over the hatch window defroster?

Absolutely. It even helps keep the back window from fogging up in the winter due to the tint acting as an insulation.

It's worth paying to get a good job. When the 3rd gen's debuted, that piece of glass was the largest and most complex automotive engineered glass design to date!
It's large, curvy, and awkward to apply tint too. The defrost lines are another issue, but not a big one. Many thousands of cars have rear defrost and it's quite normal to apply tint over the lines. Shops do it all the time.
But you'll only want it done once and done right. You don't want it trimmed poorly or large bubbles trapped underneath. Very tiny bubbles can appear when it's applied but they tend to disappear after a few days. The installer should go over these details with you so you know what to expect.

Tinting the rear glass is a common mod many do. It helps the interior from sun damage and to keep the interior a little bit cooler. That big piece of glass can make it one heck of a greenhouse inside your ride.
