It depends on the specific subs, but there are so many good small-box subs to choose from, that fitting a single 10" will probably be easier because it's going to take up less surface space than a pair of 8s, and honestly I haven't found many 8s that I like. There are less and less good quality 8s out. These days most sub manufacturers make 10, 12 & 15" models.

8"s dont seem to be that good anymore. i agree with jim. smallest i'd go is a 10". how much space are you willing to give up? i was able to fit a 12" enclosure in the bottom half of my well. ttops fit no prob, and still have 1/2 the well to store stuff. or go with one of rezn8r's stealth boxes
I plan on going with a single Boston Pro 10 inch sub. They sound great and they only need .5 cubit feet! I think I'll be able to make a box that will fit in the storage compartment area in the trunk. Not much room gone, and it'll be stealth too!

Or...if you dont mind taking out the spare tire, you can fit a 10 in there pretty easy. That is what I did. My spare tire was crap anyway and the wife didnt want to lose any of the storage. It is not the greatest 10(Coustic) and not the greatest amp(Pioneer 60watt rms) but it thumps pretty good.
