I know that we all have different amplifier preferences but I just want to get a general idea here.
I have 2 Refurbed 12" Rockford Fosgate HE2 DVCs that I got off of ebay at a great price. As far as I can tell, they are each around 800 watt peak power.
1) 2 Subs that each have Dual Voice Coils need a 4 channel amp for best quality, correct?
2) What do you all think is a fair amount of power to feed these things?
3) Any amplifier suggestions?

you dont want a 4 channel amp to power those subs...it will get really expensive
what you should do is fine a 2 channel or mono amp to power them. You want an amp that will put out about 600-800 rms at either 1 ohm mono or 4 ohm mono.
the JBL 600.1 will be a good choice for you
you could also look into amps by cadence or hifonics for good bang for the buck

You should look at a JL Audio 500x1 or 1000x1.These are high current class D amps and perform well.You can also run a 4 channel amp to you liking and power the entire system.

I have a set of 12" rockfords in my winter car hooked up to a 2 channel amp, so I have done this before, but I am unsure of how the wiring of these 2 woofers to a mono amp would work.
Can you bridge subs like these?

if you wire those two dvc subs in parrallel you will get a one ohm load...if you wire them series/parallel you'll get a 4 ohm load
it really depends on the amp that you buy to know if you want a 1ohm or 4 ohm load.
yes these subs should be bridged to the amp if its a 2 channel
