Is this carb too much for my motor?

I have a 350 bored 40 over making it a 357. It's pretty built, but I read that a 750 was made for 400's and up.

The car is a Eldebrock 750 elec choke Performer

Axle/Gears: 31 spline Moser/full spool/4.11Rich
I got a 355 that's fairly bulit, ran a 750 VS Holley cause it has an automatic, that's what they recommended, switched to Holley Race 830 DP and picked up .3, so you decide. Cars very thirsty now, but drives fine in town. I've rarely seen a testing done on a 350 with anything but a 750, it's kinda the norm. Most guys at our track are switching over to the Holley 950HP, average gain in the 1/4 is .4, expensive .4 at that, most of these motors are your average joe hot rod small block chevy that the 950 is being thrown onto.
