lag on the throttle

lag on the throttle
i have an 86 z28. i just dropped a 350 out of a 90 vettein the car. the newer engine had F.I. on it but i changed it to carb and strapped on a mechanical fuel pump(stock). i recently also put on a dynomax cat-back exhaust.
my problem is that when the rpm's are lowin 1200 or lower and put the peddel to the floor the car bucks forward and builds up rpm's before im put back in my seat? i have no idea what to do, can anyone help?
this really sucks because i cant get a decent burn out and my acceleration sucks so im at a loss.

i used the distributor from the old engine(305) no vaccum advance all electronic, and im using a rebuilt q-jet, which was also on the origional engine

im using the cars origional computer. the only thing i did was take carb 305 and swaped it for a carb 350, using all the same attachments, nothing new.
