Well make sure you keep all the sending units plugged in and untouched. You can get rid of all the wires that ran into the carb. I just plugged everything in that I could, then went through with a wiring diagram and took out everything that wasn't needed. I switched from a CC-Quadrajet to a Holley with the motor swap. Just make sure you take your time and don't just rip out anything.

The computer has nothing to do with the gauges or the alternator. If you remove the computer though you'll need a new carb and distributor. Why do you want to get rid of it anyway?

As has been said many times on this and the motor swap forum, the computer harness is completely separate from the things you want to keep. It can be removed w/o cutting, or disturbing the others you want to keep.
I'll echo the "why?" above. I've been driving mine daily for 4 years & 34k miles now, even raced it for one season, it hasn't given me a lick of trouble. The CC system is a much better daily-driver than any non-CC system, and is the only true "legal" system out there. If you have emissions testing, it is much more likely to pass sniffer than a non-CC system, and if you have a competent visual inspection, it's the only way you're going to pass. Unless the system currently has something malfunctioning, putting on a non-CC system will not improve performance, either.
No flame intended, but a lot of the hate in the world is based on ignorance. Yes, it is a little more cluttered in there with the extra wires and hoses, but it can be made to look decent, too. From an operations standpoint, the CC system is a very good setup.
But, I'm a "function over form" kind of guy, so my bias is showing.
