new guy with carb question

Hey guyz, first off I wanna say this is my first post ive been a member here for awhile just mainly researching and what not. Well about half a year ago when i was 17 I purchased my first thirdgen. Im pretty good friends with the local scrap yard guy and I saw he had a nice lookin bird about ready to be junked and I asked him how much he wanted for it and he said he could do 600. So i checked it out looked pretty sharp but had a lil rust along the rockers. but still sharp looking. So I bought it from him a not running 2.8 v6. found out the plug wires were put on wrong so I got it running and it ran smooth as silk. then after like 10 mins of running it started knockin real loud so i shut it off moved it and there was a huge puddle of oil. So found out the oil filter had a pin hole in it. well now my new bird was dead so called bob and asked him how much hed charge me to put a 350 in it for me he said build the motor and bring it ova here and i can do it for 300 bucks i said ite deal. So to make a long story short I built the motor. has a summit mild cam, summit headers, holley high rise intake with a 1" carb spacer and a 850 double pumper carb. The carb is deff overkill but it runs suprisingly well granted it can down a tank a gas in one sitting. it has great response if u ease into it and not slam the throttle cuz it will flood out . but i wanna be able to slam it and sling a lil rubber behind my wings. What is the pri the best carb for me?

If it's gonna be a daily driver many on the boards have had great success with Edelbrock's. If you want more go then a Holley 750VS would be right up there too.

yea my motors mostly decked out with holley valve covers, intake, breather, and air cleaner so kinda wanna stick to the theme ya know? but thanks for the advice on the 750. And if it matters i dont have a stock air cleaner set up I have the 3 butterfly style intake b/c the carb spaces and intake put the carb way through the hood. and it will be sorta a mix of a daily driver and a strip car. OH and with the 850 double pumper, stock fuel pump, and a full tank of gas it took me about 3 days to empty the tank just letting it idle and reving it up for about 15 mins a day. no road driving cuz the trannys blown.
