Why QFT, Proform or BG instead of Holley?
What make carbs like Quick Fuel, Proform, Demon or other Holley-based carbs better than Holley?
I mean, If the price are higher (sometimes MUCH higher!), they should be better in some way, right?

skip demon, their quality control has gone down the crapper.
next quick fuel is proform, just different names, same exact stuff
The holley HP is in line with the proform or quick fuel carbs, it's all about adjustable everything from idle emulsions to air bleeds, etc etc.
I run the 750 proform and am very happy with it.

saying all of the above are better than Holley, but there are differences
to look for in the venturi design, boosters, air horn, flow ratings.
Not all carbs flow their actual rating, and/or provide sub standard fuel
metering.
For instance, an HP series Holley will out flow, and out perform a similar
rated Avenger series.
Proform and BG make some very nice stuff for the price.

Not exactly true. While QFT does use Proform mainbodies in some of their stuff, the QFT billet metering blocks are different from Proform's. From what I've gathered, QFT is the engineering source, Proform the casting source.

The two men who designed the proform billet blocks and mainbody then opened up quickfuel after a few years and is marketing the same pieces last time I talked to the reps at route 66 in joliet, IL during super chevy. Different colors on the outside but identical parts they told me. Said the calibrations might be different on various carbs but that was it. Of course the guy could have been blowing smoke up my butt since they had a ton of quick fuel "display" models on sale cheaper than the proform guys were selling theirs brand new.

actually I have talked with Marty Brown (one of the owners of Quick Fuel Technologies) a few times and use their stuff for everything. They (Marty and the other guy, I can never remember his name) both worked for Holley and then they started QFT then designed the Proform main body. Then they got pretty big. They are definitely one of the best shops around. Price is comparable to the Holley HP carbs but they test run each one to check for leaks (air and fuel) on all. At least they did and they have on all of mine. The only quirk I have seen with the main body is sometimes they need to be checked for accuracy at times (only when just the main body is bought) If you get the whole carb they do all that before it leaves. For the money you can't go wrong.
