Just need a dizzy and a carb now. question... Do I need the cylinder head temp sensors? what do they do?

The sensor on the intake controls the fan(s). The one on the head eventually connects to the temp gauge on the dash. Without it you'll not know how hot your engine is running.

Not quite.

The temp unit in the passenger side head is the radiator fan switch.

The temp unit in the driver side head is the temperature gauge sending unit.

The temp unit in the thermostat housing is the ECM coolant temperature sensor.

Since the pass. side is the fan temp switch you would probably be better off getting an aftermarket one with a lower turn-on temp. Stock turn on temp is well north of 200*. You can buy lower temp ones from the performance aftermarket.

Also, the wire that goes to that switch is an easy place to rig a manual fan switch, if you want to. If you ground that wire, it turns the fan on. Very easy to rig a manual switch to ground so you can turn it on any time you want. You can even add this feature in parallel with the stock temp switch, if you want, so you can either have it turn on automatically or manually.
