Carb size question
So my car is really close to running, prolly by this weekend, but ive been going back and forth on what size carb i should run and lookin for an opinion, its a 350, 11:1 compression, 2.02 double hump heads that have been ported and polished, edelbrock rpm performer intake, 540 lift engle cam, also has a turbo 400 and 3000 stall, right now has a low rear end gear like a 3.08 but will be switching to a 373 or 411 gear when i get the money. A holley 750 double pumper is sittin on there right now but i keep hearing from my dads friends that its gonna be way too much carb for a 350 like that? Lookin for your guys's input?

650-750 will be fine, you just need to tune it right. Correct jets, primaries, secondaries etc. (Not a holley or Edelbrock guy so not real familiar with all that goes into tuning them).

750 will be just fine. I used a 750 vacuum secondary, a 650 DP and a 750 DP on a 350 I built that was quite similar to yours (10:1 compression, World 200cc ported heads, XE274 cam, RPM intake).
I liked the 750 vacuum secondary the most myself, as I just liked the way it felt (for lack of a better word) and found it easier to tune than the double pumpers. They worked fine too, I just prefered the VS carb.
But between the 650 and 750 DP, I liked the 750 better. Its got a few more fine tuning options built in than the 650, and it actually felt more civilized on the street than the 650, maybe for just that reason. All three carbs got about the same fuel economy once tuned properly, and both DP's felt about the same driving around town. The 750 was very slightly faster than the 650 at the track, but only slightly.
Keep the 750 you have, it will work just fine. Is it a Holley 4779?

Hmmm not sure ill have to go look, the carb came with the motor when i bought the motor, the guy i bought it from i believe had a 650 on it when he first fired it up, the motor has zero miles on it. ill have it runnin tomorrow and can possibly go from there

i forgot to get the numbers off the carb but it has mechanical secondaries if that matters at all? Still at an arguement right now with the guy thats helpin me get it runnin and he thinks the Carb is just going to drown the motor so right now theres a quadra-jet on to get it runnin.
