Computer Controlled QJet-L69 Issues
FIRST ISSUE-I am having issues with what i am assuming is the carb. After drivng the car hard or for long distances the RPM sticks (or the throttle) at about 1500-1000. If i tap on the gas real fast the RPM drops back down to normal idle.
SECOND ISSUE-When i am jsut crusing at around 30 in like second or thrid and i munch on the gas there is like 1-2 seconds of nothing then all the power at once. Not sure if this is just normal cuz its a carb or if there is a issue
any info or help would be awesome

You've got something binding up the throttle shaft or throttle cable. Dirt is a common culprit.
As for the "bog" when going WOT, check your choke pull-off (aka "vacuum break" in the factory manual) with a vacuum pump. If it won't hold a vacuum after being pumped down, you need a new one.
You may also need to adjust your air valve tension. There's a tech article (linked from the thirdgen.org homepage) that describes the process. But, make sure the choke pull-off is good before messing with the AV tension.
