Rich, Lean, or Something Else?
I'm running a Holley 600 cfm 4bbl carb on a relatively mild 350 in an 82 camaro. My problem is that when I mash on the gas, the car hesitates, lurches forward, and then launches. From a stop it's the worst. After the initial bogging, it accelerates like the devil. The problem gets a little better as the car warms up but never really goes away. Is this more indicative of a rich or lean condition or something else entirely?

If the hesitation is immediate, I would check the accelerator pump. Also, if you have vacuum secondaries, make sure they aren't opening too soon.

The Jegs part # for my carb is 510-O-80457S. It has vacume secondaries and electric choke. How do I go about adjusting the accelerator pump or do I have to replace it? Also, what would be too soon for the secondaries to open?

Hey, i'm getting that too (in 2-3 business days). I've worked on 2 quadrajets before, and to get to the accelerator pump we had to tear down the carb. Opening the Quadrajet was pretty straightforward, and I hear that the Holley is real easy. As long as there aren't any Torx screws, you can do the whole thing with the flat edge, or phillips head screw drivers, and plenty of carb cleaner.
As for adjusting vs. replacemnt, the Quadrajets are replaced and cannot be serviced externally, i don't think that will help much with a Holley but it may give you an idea.
