Coolant Boiling Over

I just got alot of work done on my cooling system. Thermostat, fan belt, MAF sensor. A/C's already been removed so the 2nd fan is used for the rad, aluminum rad already too. Now the engine runs alot cooler because the temperatures been lowered because GM usually runs them high (not like i'm driving in winter). Anyway I also found out my header gaskets are leaking. My engine only overheated when I put the pedal to the floor and gunned it. Then coolant would boil over after I parked it. Could that have been the problem the entire time? I mean the cooling system upgrades are good, but could the header gaskets been the source of my problem? And if my header gaskets are leaking is this going to result in any other problems, like with my oil or coolant? because I already had the coolant flushed...Engine runs fine now and the temp is always under half on the odometer.

1987 Trans Am GTA, 5.7L 350CID engine, Entire exhaust system upgraded...cars runnin around 350 HP. (many more mods).
