I don't know a whole lot about cooling systems but here is what I think. My '92 has 3 'sensors/switches' associated with the cooling system.
1. The CTS or Coolant Temp Sensor. This is what the computer uses to determine the engine temp and control the fan on the drivers side.
Mine was located on the front of the intake manifold and has two wires running to it.
2. The fan switch. Is used to control the fan on the passenger side of my car. I just bought a hypertech one (on at 200 and off at 185). It is located in the passenger side head between # 6 and #8 spark plug. It has one wire running to it.
3. Temp sender (I think). This is what sends the signal to the temp gauge.
It is supposed to be located in the drivers side head/block near #1 spark plug.

I think you need the temp sender. I just replaced the CTS and Fan switch but don't have any experience with the temp sender.

Have you tried a thermostat ??..if its stuck open you will have the symptoms you described.
